I've used the stitching feature in Photoshop. It has had variable results for me in the past, primarily (I think) because I don't lock the camera down enough to stablise the settings between shots.
CS3 apparently does a much better job, particularly on the seams to make them disappear.
A bit expensive, though, if all you want to do is use it for panaramas!
